Pumpkin Chocolate Chip Collagen Muffins

First off, this recipe is Fall in your mouth. Moist, soft and fluffy goodness with melted gobs of chocolate giving you a mouthful of gooey dreaminess.
It's strange that we're just now starting summer because it honestly feels like leaves should be falling from the trees already. I have been going on walks every morning before my meetings to listen to my favorite podcasts with no distractions and I keep wearing a hoodie or vest with the morning chilliness in mind. Within minutes I start sweating because I clearly misjudged the San Jose clouds, thinking they would hide the 75 degree heat rather than only the sun. Maybe it's because we've all been inside so much and I associate that with Fall and Winter time that I'm feeling mentally unprepared for Summertime.
Regardless, no matter what time of year it is I can always go for a good pumpkin chocolate chip muffin. I know that banana bread has been a huge quarantine trend on Instagram recently, which is a classic, but pumpkin is timeless. Why not both? Heck, anything with chocolate chips in it I'm game.

I wanted to make this recipe for people to be able to whip up for the family on a seemingly chilly morning, but is also providing healthy benefits with the added Collagen. Now onto the muffins! They aren’t too sweet because they really emphasize the pumpkin flavor and fluffy texture. It uses coconut sugar and vanilla for sweetness, and cinnamon and pumpkin pie spice to highlight the cozy essence of a classic muffin. If you’d rather sub in honey or maple syrup for sweetness, feel free! The ratio will be 1:1 .This recipe calls for oat flour and I have not tested any other substitutions. As for the chocolate— personally I think it’s the most important and vital ingredient and you can use any chocolate you’d like. I never put a cap on how much :)
Pumpkin Chocolate Chip Collagen Muffins
1 can of 100% Pumpkin 1 3/4 cups of oat flour 1/3 c Coconut Sugar 2 Scoops Further Foods Collagen 2 Egg 1 tsp Baking Soda 1/2 tsp Cinnamon 1/2 tsp Pumpkin Pie Spice 2 tsp Vanilla 1/2c Chocolate Chips — your favorite kind!
