Pumpkin and Blueberry Pie Overnight Oats

Happy Fall y'all! October is my favorite month not only because of all of the great holidays— Halloween, Thanksgiving, and my birthday, but because of the season's cheer, spirit, crisp air, and all of the cozy time spent with family and friends.


I also love this time of the year because it's the best time to experiment with new flavors, cozy spices, and all things pumpkin. I decided to make a delicious, warm and cozy bowl of yumminess to eat all of October as the weather starts to get chilly. You're probably thinking chilli, which I do love making all throughout Fall and Winter, but this recipe was meant to be enjoyed when you first wake up in the morning and don't want to get out of your warm bed. This bowl will warm you up and give you the cozy vibes.


Pumpkin & Blueberry Pie Overnight Oats


These oats are so delicious, I couldn’t even believe how they turned out the first round. There is a bit of a technique to these oats and that’s when to incorporate each ingredient. These overnight oats can also be made as a warm bowl— just microwave them instead! The combination of pumpkin and blueberries offers an amazing sweet and tartness with all of the fall flavors.  You can also substitute any other fruit, nuts, or chocolate chips for the blueberries to make different combinations. Don’t forget to use the key spices in these oats— cinnamon and pumpkin pie spice!



These oats are made with one of my favorite brands, which I have mentioned on here before: The Califia Farms Pumpkin Spice Almond Milk Creamer. I use this creamer in my coffee every morning to make a pumpkin spice latté because it’s that good. This creamer is a key ingredient in these pumpkin oats as it adds tons of flavor without any added sugar.

1/2c Steel Cut Oats 2 tbsp 100% Pumpkin 1/2c Almond Milk (or nut milk of choice) 2 tbsp of Califia Farms Pumpkin Spice Creamer 1/4c Frozen Blueberries 1/4 tsp Cinnamon 1/4 tsp Pumpkin Pie Spice 1/4 tsp Vanilla


  1. Add all ingredients, except for 1 tbsp of the Califia Farms pumpkin pie spice creamer into a mason jar and mix thoroughly. Place in fridge and let it sit overnight.

  2. In the morning, transfer the oats to a bowl. If you want the oats warm, microwave for 1-2 minutes. If you want them cold (which is how I had them), leave them be in the bowl. Top with 1 tbsp of pumpkin pie spice creamer, more cinnamon, pumpkin pie spice, and fresh blueberries as desired.
